Waffles For Dinner: A Simple Weeknight Meal

waffles for dinnerNeed an easy meal for a busy weeknight? Don’t know how to fill in the gap in your menu plan? Then you should try having breakfast for dinner.  Waffles can be a fast and delicious meal that will satisfy the most picky eater.  With an endless amount of toppings, it is very easy to make each family member their own special belgium waffle. This is a great meal to get everyone to help with preparation, and you can spend time in the kitchen chatting and catching up. 

As a word of caution, remember if you have any children in the kitchen while you are using a waffle maker, you should use good judgement while allow young children to work around a hot waffle maker.

 

Simple Belgium Waffles

Prep Time: 10 minutes

1 waffle

Simple Belgium Waffles

Ingredients

  • Belgium waffle maker
  • Premade waffle mix or homemade waffle mix
  • Butter spray
  • Vanilla
  • Fruit of your choice(optional)
  • Whipped cream(optional)
  • Toppings of your choice(optional)

Instructions

  1. Make waffle mix according to the box, or use your homemade mix. Set to the side and allow at least 5 minutes for mix to settle.
  2. Heat waffle maker, then spray butter spray on plates to prevent sticking.
  3. Carefully ladle batter into waffle maker, using your judgement as to amount.
  4. Bake waffle till done.
  5. Remove waffle and place on a plate.
  6. Add toppings like sliced fruit, or whipped cream. Butter and syrup work just as well.

Notes

Remember to use the cook times suggested by your waffle maker. If you use homemade mix, cook times may vary. Just about any combination of toppings can be used.

Menu Planning On Monday: Week of February 3rd

Menu planning has always been one of the things that I always avoid. My husband is a busy guy, and he usually leaves all the menu planning to me. It’s hard sometimes, because I don’t want to make things that he doesn’t enjoy eating. We tend to get in the same pattern of eating similar things week after week. That’s why I enjoy participating in Menu Plan Monday. It’s a great way to share your meals with others, and get some new ideas as well! My family enjoys a lot of chicken, so I am always looking for new, healthy ways to make it. I have some great recipes on Menu Plan Monday. And the bonus? Menu planning saves you money in the long run, because you are not constantly running to the store. Time and gas are both saved, and you have more time to spend with your family. Crockpot Buffalo Chicken Cheesesteaks

buffalo chicken cheesesteak1Crockpot buffalo chicken cheesesteaks are a great meal for your entire family.  When I did my menu plan for this week, everyone in the family requested it.  When you have a lot of running around to do, this delicious meal cooks while you are on the go.  Using just a few simple ingredients, you can have a tasty meal when you get home.  This crockpot recipe is great for a Superbowl Party or a summer picnic, as well.
 

 

Crockpot Buffalo Chicken Cheesesteaks

Prep Time: 10 minutes

Cook Time:

Total Time: 6 hours, 15 minutes

Yield: 6 cheesesteaks

Crockpot Buffalo Chicken Cheesesteaks

Ingredients

  • 6 frozen boneless chicken breasts
  • 1 large bottle Texas Pete's buffalo sauce
  • 2 Philadelphia cream cheese blocks
  • 1 jar Marzetti's Ultimate Bleu Cheese dressing
  • Large bag shredded Italian blend cheese
  • Steak rolls of your choice

Instructions

  1. Spray a crockpot with non-stick vegetable spray.
  2. Place frozen chicken breasts into bottom of crockpot.
  3. Pour buffalo sauce on top of chicken, leaving a little bit on the side.
  4. Place cream cheese bleu cheese dressing on top.
  5. Place lid on top and cook on low for 6 hours.
  6. About 30 minutes before you are ready to serve, remove chicken from crockpot.
  7. Stir liquid that remains in the crockpot thoroughly, then remove 3/4 of liquid. Dispose excess liquid.
  8. Shred chicken into fine pieces, place it back in the crockpot, stir, and cover.
  9. When you are ready to serve it, add cheese to crockpot and allow cheese to melt.
  10. Serve on steak roll.

Notes

Substitute no fat cream cheese, low fat bleu cheese dressing, and no cheese for a lower calorie meal.

Chicken Fajitas

Chicken fajita, easy recipeChicken fajitas is one of my family’s favorite recipes. It is a simple meal that can go from pan to table in less than 30 minutes. It is highly customizable, depending on your family’s tastes and health needs. My chicken fajita recipe is also great for a large family party, or a take-along recipe when you are at a friend’s house.  If you read my blog, you will see that chicken fajitas are a staple in my menu plan.

 

Chicken Fajitas

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: About 3 fajitas, serving size is one fajita with 1/2 cup chicken mixture.

1 tortilla with 1/2 cup chicken mixture

333 calories per single serving

15 grams of fat per single serving

Chicken Fajitas

Ingredients

  • 2 packs Tyson Chicken Fajita pieces or 3 large boneless chicken breasts cooked and diced.
  • 1 bag frozen mixed pepper strips.
  • 1 pack McCormick fajita seasoning.
  • 1 bag shredded Mexican blend cheese.
  • 1 bag tortillas of your choice.
  • Sour cream, as needed.
  • Small amount of vegetable cooking spray(optional).

Instructions

  1. In a non-stick pan, warm up chicken pieces on medium heat. Spray with a little bit of vegetable cooking spray to help the chicken from sticking.
  2. Add frozen pepper strips to pan and cover, stir occasionally .
  3. Let chicken and peppers cook till soft(usually about 10 minutes).
  4. When chicken and peppers are warmed through, drain off excess juices.
  5. Add fajita seasoning and mix thoroughly(I do not add water, as the juices from the chicken and peppers are sufficient to coat with seasoning).
  6. Turn heat to low, add taco cheese and cover, and allow time for cheese to melt.
  7. Spoon fajita mix onto a warmed tortilla(I warm it up in the microwave for 15-20 seconds), add sour cream, if desired, and roll.

Notes

You can watch fat and calories by omitting sour cream, using low fat cheese, and serve fajita mixture on a wheat tortilla. You can also add rice or black beans, as additional toppings. If you wish, you can turn this into a chicken fajita salad by adding mixture to chopped greens, and tearing up the tortilla into pieces, and mixing into salad. This recipe lends well to doubling and tripling, depending on your family's needs.
