Easy Dijion Chicken And Potatoes

*This recipe was from my friend Aubree, and a favorite of dh’s


Dijon Chicken and Potatoes

  • 6 boneless skinless chicken breast halves
  • 1 pound quartered small red potatoes
  • 1/3 cup mayonnaise
  • 3 tablespoons dijion mustard
  • 1/2 teaspoon black pepper
  • 2 cloves of garlic, crushed (or a teaspoon of it from one of those jars of pre-chopped/minced)


Put the chicken halves and potato quarters in a 9X13 pan.

Mix the other ingredients together, and brush on the chicken and potatoes.

Bake 45 minutes at 350 degrees.  Serve with a side salad and you have a great, easy meal.

    I saw your link on the MckMama forum. I thought I would look over your site. The recipe looks tasty. The layout looks good. My only possible negative is that I can’t read all of your header. My (old) nearly square monitor shows “king our Life matter Embracing what’s l Letting go of the R”.

      Hmm, that’s something to think about. I have my large 17″ monitor, so maybe I need to adjust my widths.

    That sounds delicious! Son #2 and I attended UNL’s Red Letter Day and the cafeteria served dijon chicken. He LOVED it so I’ve tried a couple recipes that were close but this one sounds much better than anything I’ve tried yet! Definitely giving it a shot!
