It’s a new week, and time to start a busy schedule! I am spending time working, and packing for our trip to Ohio at the end of the week. Sometimes I think that the stuff will never get done. One thing I want to make sure I have done is my menu plan. Sometimes it is so hard to figure out what to have because you are so busy. But I came up with a few for this week.
Sunday: My mother-in-law made our favorite meal of chicken tenders, mashed potatoes, carrots, and corn. She did send some leftovers home, so I am going to enjoy them for another meal.
Monday: I work 3-11, so I am making my favorite crockpot meal of buffalo chicken cheesesteaks. I am doubling it so there are leftovers for tomorrow.
Tuesday: Leftovers from Sunday and Monday nights. I am working 3-11 again, so I at least know my family is eating something good.
Wednesday: Breakfast for dinner. Scrambled eggs, toast, and bacon. Breakfast for dinner is always a hit when you need something fast.
Thursday: Chipotle! We need to finish last-minute things before we leave for vacation. Everyone gets their favorite meal, and I don’t have to cook. Bonus? No dishes.
Friday: My guess is Quaker Steak & Lube. Best wings around! It is always tradition for us to eat there because our closest one is almost 2 hours away. Yeah, I realize our drive to Ohio is 5 hours, but it seems much more enjoyable there! After all, it was our friends that introduced it to us in the first place.
Saturday: Birthday menu food. My best friend’s daughter is celebrating her 9th birthday. So picnic and party foods are what’s for dinner. Can’t wait.
So that is what is cooking in our house this week. I am excited about going on vacation, and am so happy I have a plan this week that will feed my family and taste great.
