It is the start of a new week. Of course, a new week means a whole new set of busy days. Now that time change is here, it is light longer at night. For some reason, I find it much easier to cook. Even though hubby still comes home later, there is something so satisfying about eating supper while the sun is still up.
Today is Nana’s birthday, so supper will be quick, as we are going to visit her. In fact, I am not sure if we will even get to eat supper together tomorrow. And the rest of the week is pretty busy as well. So, this is going to be a short post, with quick and simple menu ideas.
Today: Since the chances of hubby making it home before we have to visit Nana(she is actually on his way home from work, so it makes more sense for him to meet us there instead of coming all the way home)is very slim, I am thinking grilled cheese sandwiches.
Tomorrow: Simple burgers and beans. Nothing fancy, but enjoyed by all.
Wednesday: Again, I am going for simple. Going to go out on a limb, and try a new recipe. I am going to take Ronzoni’s Gluten Free Rotini, cut up some apple chicken sausage from Johnsonville, and top it with a simple marinara sauce. If it turns out as well as I think it is going to, I will be sure to share the recipe!
Thursday: Still deciding. It all depends on whether or not we head to a baseball fundraiser. If we do, it will be snack bar food.
Friday: I am thinking that pizza will be on the menu. Does anyone have an easy recipe for homemade pizza? I am in an adventurous mood, and would love to try something new!
Saturday: I would guess it will be Chipotle. Or perhaps we will head out to a local authentic Mexican restaurant.
So that’s it! Just a simple menu for a busy week. I am looking into investing in a tabletop grill(similar to George Foreman) to do some grilling of meats. Any suggestions?
