Happy Monday! Did everyone survive Mother’s Day? I know it was a really difficult day for a lot of my friends, both in real life and online as well. I found myself really missing my Grammy lately, more so that I just realized she has been gone now for 23 years. Love and miss you Gram! I had all the intention of getting my menu plan done yesterday so that the husband and kids could get the grocery shopping done. And then fate decided I should have other plans.
My FIL had to go the hospital for heart issues. He is doing well, and will probably come home tomorrow. And you know what? He was all worried that he was ruining our Mother’s Day. It goes to show you what a wonderful man he is. And then to top things off, my youngest was outside playing with our 12-year old Golden Retriever, and she got her nail caught in the grass and half ripped off. We had to dash her off to the vet for an emergency nail cutting. Now she is sporting a blue boxing glove on her right paw. Never a dull moment in our home!
Believe it or not, I did manage to get a nap in the midst of all that busyness! We visited my Mom in the afternoon, and my hubby made me take a nap. Good thing, because the nail disaster happened right as we were finishing up with dinner.
So now that it is back to a normal day, time to get back to my favorite task of menu planning. With yet another busy week, it has been hard to plan.
Menu Plan Monday: May 12
Monday: I work 3-11, so my husband is making the boys and him pancakes and bacon. It is a simple meal, and they all enjoy it.
Tuesday: Hubby and I have a date night to a concert to see Alice In Chains. There is a Texas Roadhouse right there, so I would imagine we are going to that. It is also his birthday that night, so imagine we will splurge. Since we are eating out, I am not sure if this should be included on the menu plan. Or tomorrow’s meal as well.
Wednesday: It is hoagie day. Our baseball team sells hoagies for their fundraiser, and they are always such a big hit! They are made by a local American Club, and are always the best. Always fresh. Always tasty.
Thursday: I work 3-11 again. And I decided that instead of them having to get something out, I would make them a meal in the crockpot. I found the perfect recipe for One Dish Slow Cooker Pot Roast at Girl Gone Mom‘s blog. She has a lot of delicious recipes, so be sure to head on over and check them out!
Friday: Most likely pizza. I work till 6pm, so it is on my way home. They have really great cheesesteaks there as well, so I may have one of those. They still aren’t as good as my buffalo chicken cheesesteaks, but they certainly come close.
Saturday: My husband, myself, and our youngest will be headed to Hershey Park for this year’s Music In The Park band competition. We get catered picnic food as our main meal, and then we usually grab pizza later in the evening. And cookies, of course, from Chocolate World. Saturday is also our 17th wedding anniversary. What a way to spend it, but I wouldn’t change it for anything. Hearing the kids play music, and then watching them have a great time at the park is worth it. Of course, I get my son going by saying we are going to go up in the Kissing Tour and make out! LOL!
