Making meals and menu planning has always been one of the things that I always avoid. My husband is a busy guy, and he usually leaves all the menu planning to me. It’s hard sometimes, because I don’t want to make things that he doesn’t enjoy eating. We tend to get in the same pattern of eating similar things week after week. That’s why I enjoy participating in Menu Plan Monday. It’s a great way to share your meals with others, and get some new ideas as well! My family enjoys a lot of chicken, so I am always looking for new, healthy ways to make it. I have some great recipes on Menu Plan Monday. And the bonus? Menu planning saves you money in the long run, because you are not constantly running to the store. Time and gas are both saved, and you have more time to spend with your family. So please take a moment to read my menu plan for the week of January 21st.

Tuesday~Chicken fingers, mashed potatoes, corn, and carrots
Wednesday~ Leftovers
Thursday~Burgers and baked beans
Friday~Buffalo chicken bites with bleu cheese dressing

Spaghetti is one of my favorites. I use Ragu sauce, but add fresh garlic, diced onions and peppers, and ground chicken.

This week we are trying to eat things in our freezer. Tonight I’m roasting a chicken and hopefully we’ll eat the leftovers on Wedensday. Tomorrow we are having Chile and Thursday Stuffed Chicken breasts. Should be a good week!

Buffalo chicken bites? Yum! I’m so behind this week, I haven’t planned dinner yet. Tonight is chicken and that’s about as far as I’ve gotten, hehe.

Ashley, they are Tyson brand. You can find them in the frozen foods section! The bleu cheese dressing is from Marzetti’s, or Ken’s. I can’t remember which one is the fridge at this time!

Nice menu. I really need to get back to my menu planning. I went through all of my recipe books and picked out several recipes in each of them and created an excel spreadsheet to use for easy menu planning. In December my All-In-One screen crashed and after a month with no computer I am way behind. So far this week, we are having porkchops tonight and spaghetti another night. I really do need to get back into the swing of things. You are inspiring me.

You sound like me. I hate doing the menu plan without my husband, but he hates doing it. However, when I do it myself he inevitably doesn’t want something that’s on my menu. I hate the 5:00 what’s for dinner question though so I have been trying to make sure I do it as much as possible. I have too much chicken on my menu too, lol. I try to mix it up, but I really will only eat chicken.

We LOVE chicken too. My husband and kids will eat it every night if I made it. I also try to get a little variety, but sometimes it is not worth the battle.
Looks Like a great week of meals. I like Thursday and Friday. I never think of baked beans with burgers but the boys would love that.
