The weekly menu plan is definitely one thing that keeps my life on track and running as smoothly as possible. When we go grocery shopping, I have a well-written list that helps me not to forget what I need to make our dinners. I also have been trying to organize it by aisle.
Well, that is the plan anyway. Some weeks I fail, some weeks I succeed. This week was a success, so I am pleased with that.
So what is cooking this week?
Today: It is going to be a breakfast-for-dinner kind of night. I know it is Super Bowl Sunday, and we were supposed to go to a party with our baseball friends. But we are supposed to get more of that dreaded snow, so we are going to stay home and be safe. I have a few snacks for us to enjoy during the game.
Tomorrow: Slow Cooker Sausage Sandwiches
Tuesday: Easy taco bar. I fry up some ground chicken, add the taco seasoning, and line-up the toppings on the counter. It is a win-win situation because everyone can make it just the way they want it with no complaining.
Wednesday: OYO. I work till 7pm, and hubby has to take our oldest son to a class scheduling meeting. I am kind of glad I miss it because it is a double whammy. My oldest is going to be a junior and my youngest will be a freshman! Eek!
Thursday: I am going to make slow cooker Dijon chicken with red potatoes. I will definitely share the recipe with my readers another time. First I have to get some awesome pictures to share.
Friday: Depends on the weather. If we have to stay in, then I think grilled cheese sandwiches. Or maybe eggs and salsa.
Saturday: I work till 6, so I am thinking it will probably be something from the mall.
So there is our menu plan for this week. I hope. Let’s just say, it will probably be open for change. I am hoping we won’t get more snow, but just in case, I will be ready with my snow day essentials.
