Fun Rainbow Sherbet Cake Recipe

Spring is a fun time, and always has such pretty colors. There are many parties going on, and no one wants to show up empty-handed. Why not bring this colorful rainbow sherbet cake recipe to your next gathering?

I love that this dessert recipe is perfect for Easter, birthday parties, and, of course, baby showers. This beautiful cake isn’t as complicated as it looks, and it is sure to be a treat that everyone enjoys.

Tools You Will Need To Make The Rainbow Sherbet Cake Recipe:

  • 9×12 baking pan
  • 1 drop Orange Cake Flavoring
  • 1 drop Strawberry Cake Flavoring
  • 1 drop Lime Cake Flavoring
  • 1 drop Neon green food coloring
  • 1 drop Pink food coloring
  • 1 drop Orange food coloring
  • Maraschino cherries
  • Waffle cone
  • Cake sprinkles

You will also need:

  • 1 box cake mix(either white or vanilla, whichever you prefer)
  • 3 cups powdered sugar
  • 3-5 tbsp heavy cream
  • ½ C unsalted butter
  • 1 tsp. Vanilla extract

Directions To Make The Rainbow Sherbet Cake

My favorite thing about this recipe is that you don’t have to be an amazing baker to make it. I will admit, that I am definitely NOT in the class. If are blessed with the ability to bake, you may want to make a homemade cake recipe. The directions are the same for the rainbow sherbet cake recipe, no matter what method you use.

Step #1: Preheat the oven to 350 degrees and spray your 9×12 baking pan with non-stick baking spray.

Step #2: Add cake mix, eggs, oil, and water into the mixing bowl. Stir to combine. If you are using your own recipe, prepare as you normally would.

Step #3: Split the cake batter into 3 small bowls.

Step #4: Add 1 drop of the food coloring & 1 drop of the flavor to each bowl and stir to combine.

Step #5: Using a small ice cream scoop, add to your baking pan by alternating colors until it is 3/4 filled.

Step#6: Bake for 22-24 minutes or until baked through, check with a toothpick.

Step #7: While the cake is baking, prepare your frosting. You will need:

  • 3 cups powdered sugar
  • 3-5 tbsp heavy cream
  • ½ C unsalted butter
  • 1 tsp. Vanilla extract

To make the frosting, simply

Add all ingredients to a large mixing bowl. Mix on low speed for 2-3 minutes until ingredients are combined. Then mix on medium speed for an additional 3 minutes until frosting is
peaking, meaning that it is holding its shape.

If you are anything like me, make sure you resist the urge to eat half of the icing before it is time to finish the cake.

Step #8: Once the cake has cooled, spread the frosting evenly on top of the cake.

Step #9: To finish off the cake, Using a piping bag and a large star tip create dollops on top to look like whip cream.

Garnish with cherries, waffle cones, and sprinkles. And don’t forget to enjoy it!

Such a pretty cake, and it doesn’t involve a lot of work. If you decide you don’t want to do icing, Cool Whip makes a great substitute. Mix it with the powdered sugar, “ice” the cake, and keep it in the fridge until ready to add the final touches.

Instructions

  4. Split the cake batter into 3 small bowls.Add 1 drop of neon green food coloring and 1 drop of lime flavoring.Stir to combine.Add 1 drop of orange food coloring and 1 drop of orange flavoring.Stir to combine.Add 1 drop of pink food coloring and 1 drop of strawberry flavoring.
  5. Add the cake batters to the baking dish by using a 1 small ice cream scoop of batter at a time. Alternate 1 flavor at a time, filling the baking dish until it is ¾ full.
  6. Bake for 22-24 minutes or until baked through, check with a toothpick.
  7. To make frosting: Add all ingredients to a large mixing bowl.Mix on low speed for 2-3 minutes until ingredients are combined.Then mix on medium speed for an additional 3 minutes until frosting is peaking, meaning that it is holding its shape.Spread the frosting evenly over the top of the cake.Using a piping bag and a large star tip create dollops on top to look like whip cream.

Notes

Fun substitute for frosting: Take 2 containers of Cool Whip and add powdered sugar to them. Spread over cake, and refrigerate until ready to garnish and serve.
