Ingredients
1/2 lb large shrimp (peeled and seveined)
3 beaten eggs
1/4 c chopped onion
3 c. cold cooked white rice
1/4 c. frozen peas
1/4 c. chopped broccoli
1/4 c. sliced carrots
1/4 tsp salt
1/8 tsp pepper
1 Tbsp sesame oil
1 tsp oyster sauce
2 Tbsp soy sauce
(Substitute vegetables to your liking)
Directions
Season shrimp with salt and pepper then set aside
May use (Seafood seasoning) of your choice
Bring large pan (wok) to med-high heat and add sesame oil cook shrimp 1 minute on each side then remove from pan
Add beaten eggs to the pan and use a wooden spatula to cook for a minute or two until fluffy then slide eggs to the side of the pan.
Add a small amount of oil to the pan if needed. Toss the onion, carrots, and broccoli into the pan and cook for a couple of minutes then add the rice, oyster sauce, and soy sauce.
Mix in the shrimp and eggs then add frozen peas all while stirring constantly.
