It is hard to believe that Valentine’s Day is over already. I had lovely date night with my husband, and enjoyed our one-on-one time. But now it’s time to start thinking about St. Patrick’s Day. St. Patrick’s Day is one of my favorite holidays. I guess it is because I have a wee bit o’ Irish in my family background. You can tell by the red hair in our family. Well, the red hair I used to have before I had kids. LOL!

The sad thing is this: I love Irish cooking, but the rest of my family does not. They still love their meat & potatoes. Can’t say I blame them, but sometimes a big old plate of Coddle in the crockpot would really hit the spot, especially with the crazy cold winter we are having.
