Summer is winding down, nights are getting shorter, and there is a chill in the air. If you are anything like me, you will want to hang onto summer as long as possible. Even in the dead of winter, I love my iced tea and my summer sandwiches. But certain foods don’t need to be enjoyed only in summer. With my easy summer chicken salad recipe, you can have the taste of summer all-year round.
Getting everything for my recipe was extremely simple. Walmart had everything I needed all in one place. From the Hellmann’s mayonnaise to the Lipton Iced Tea, and even the rolls, lettuce, and peaches, too. I was in and out in no time, ready to make my #TEArifficPairs.
The first thing I made was my mango-peach iced tea. Thanks to Lipton’s new Mango flavored iced tea mix, making the iced tea was quick and easy. The ready-to-mix drink powder is the perfect start to my summer pairing. I cut up some fresh peach slices and added them to the glass to finish off my tea. I love my tea icy cold, so I made it early, and kept it refrigerated until I was ready to enjoy it.
And now for my favorite part. The easy summer chicken salad is made with a few simple ingredients. Hellmann’s mayonnaise gives it a rich taste that just can’t be beat. So here is the recipe for the easy summer chicken salad that you can print out and use anytime!
Easy Summer Chicken Salad:
- Boil chicken breasts until tender. Shred the chicken, and add a dash of pepper. Set to the side.
- In a bowl, combine the celery and the cranberries.
- Add the chicken, and slowly combine in the mayonnaise.
- Add the seasoning.
- Cover and refrigerate overnight.
- When ready to serve, spoon onto your roll or bread, add the lettuce on top.
