Limencello Meringue Cookie Lemon Parfait

A light and creamy dessert for that special occasion or just because. It is sure to please everyone in your family!

Serves: 4 parfaits
  • Limoncello Meringue Cookies
  • Lemon pudding
  • 2 cups whole milk(to make pudding)
  • Cream cheese, whipped variety
  • White powdered sugar
  • Raspberries
  • Whipped dairy topping, thawed
  1. Make pudding as directed, set aside.
  2. In a bowl, combine cream cheese, white powdered sugar, and some of the whipped dairy topping. Place in fridge for about 10 minutes.
  3. Layer bottom of serving dish with pudding.
  4. Add a layer of the cream cheese mixture on top, and spread evenly.
  5. Hand crush Limoncello Meringue Cookies, and place a layer on top.
  6. Add raspberries on top.
  7. Finish with another scoop of the whipped dairy topping, and add the cookie.
Can be made ahead of time and kept covered in refrigerator.

Quick topping tip: scoop out dairy whipped topping with an ice cream scoop onto a cookie sheet. Put in freezer. When you are ready to top off your creation, you can just remove an individual scoop directly off the cookie sheet.
