Good Monday morning!
It has been quite a while since I participated in Menu Plan Monday. Life kind of got away from me, and we have been flying by the seat of our pants when it came to menu planning. So not okay!
Life has been unbelievably intense for my family. Not something we expected. Our oldest son had a freak accident where he fractured a vertebrae and required spinal surgery. I am currently on FMLA, so it is really important that we are smart with our finances. Menu planning is of vital importance right now, so I can’t wait for more meal planning inspiration.
It is always amazing to see how much time and food is wasted without a menu plan. I am not sure why I slip off the bandwagon, but I am determined to stay on!
So what’s cooking this week? Read on!
Monday: Hubby is away this evening for a fantasy football draft. So the boys and I are having chicken cordon bleu and corn for dinner.
Tuesday: We are having tortellini and sauce.
Wednesday: Going for an old favorite: breakfast for dinner. It will be Belgium waffles and sausage/bacon.
Thursday: Fresh baked pizza from our local grocery store. Delicious and easy to make.
Friday: TBD. I am thinking maybe KFC.
Saturday: I am going to have to say, it will probably be Chipotle!
So that’s it, that’s our menu plan for this week. Simple and easy is the name of the game. Hopefully by doing some planning again, we can get back into a normal menu planning routine!
