Good Monday morning!
I hope that you are all well on this sunny Monday morning. I am enjoying it now, as we are supposed to have some wet, rainy, icky weather starting tomorrow afternoon. YUCK! This Mom is so ready for Spring! How about you?
It has been a SUPER busy week at work for me. Today is day 7 of 8 days in a row. I am exhausted! Thankfully, I have a menu plan in place, so dinner is one thing I don’t have to worry about.
It is always amazing to see how much time and food is wasted without a menu plan. I am not sure why I slip off the bandwagon, but I am determined to stay on!
So what’s cooking this week? Read on!
Monday: Tonight I work 3-11, so it is pizza for my 3 men. My youngest loves helping out in the kitchen, so he gets the pizza started when my husband is on his way home from work.
Tuesday: Tacos! One of my favorite meals to make, as it is so easy to make, even after a busy day at work. I lay it all out on the counter and everyone helps themselves. And when you buy already diced tomatoes and shredded lettuce, it is even easier.
Wednesday: Hoagies from a school fundraiser. I do have a back up in case the weather is bad, and we can’t get the hoagies. The back up plan? Scrambled eggs and bacon. I really wish I had some Speck ham to put in the eggs.
Thursday: Spaghetti and bread. A simple but filling meal! I will have to share my slow cooker spaghetti sauce recipe soon. In the meantime, check out my other slow cooker recipes.
Friday: Still to be determined.
Saturday: I am going to have to say, it will probably be Chipotle!
Sunday: Dinner is at MIL’s, so it is a surprise until we get there.
So that’s it, that’s our menu plan for this week. Simple and easy is the name of the game. Hopefully by doing some planning again, we can get back into a normal menu planning routine!
