Making meals and menu planning has always been one of the things that I always avoid. My husband is a busy guy, and he usually leaves all the menu planning to me. It’s hard sometimes, because I don’t want to make things that he doesn’t enjoy eating. We tend to get in the same pattern of eating similar things week after week. That’s why I enjoy participating in Menu Plan Monday. It’s a great way to share your meals with others, and get some new ideas as well! My family enjoys a lot of chicken, so I am always looking for new, healthy ways to make it. I have some great recipes on Menu Plan Monday. And the bonus? Menu planning saves you money in the long run, because you are not constantly running to the store. Time and gas are both saved, and you have more time to spend with your family. So please take a moment to read my menu plan for the week of January 27th.
Sunday~ Meatloaf, mashed potatoes, corn and carrots(I just want to add a comment that most Sunday meals are made by my MIL, not me)
Monday~Easy Chicken Alfredo ~I am modifying this recipe to use linguine noodles, instead of penne pasta, just for a change of pace.
Wednesday~ Buffalo Chicken Cheese steaks in the crockpot. Another adopted recipe from here. I just throw all the ingredients(I substitute whole frozen chicken breasts) in the crockpot on low for 6-8 hours. Fifteen minutes before hubby comes home, I shred the chicken, toss it back in the crockpot and add the cheese. I serve it on steak sandwich rolls.
Thursday~Sausage and corn
