Eating is one of the most basic things a person needs in their life. Food nourishes you, and sustains you, and comforts you as well. Deciding what to eat should be an easy decision, right? Wrong! It can be such a stressful activity, especially if your family likes so many different things. My youngest is always the dissenter in the family. Everyone else can agree on everything, except him. And when he doesn’t like it, he certainly makes his feeling known! He is going to be 13 in 2 weeks, and he has turned into the world’s fussiest eater! I miss the baby days, when he would eat anything!!
But I am getting off-topic here. I got a late start on menu planning this week because I was under the impression I only had to go somewhere one night this week. Of course, that changed in a few short minutes with several phone calls. So here is what the plan looks like this week. Of course, this was after 20 minutes of arguing from 3 of us, and 15 minutes of whining from the youngest.
Sunday: We had a new pastor start yesterday, so we were all present in church. So, since we were in church later, we decided to go to Applebee’s for lunch. It was great because nobody had to cook or do dishes. I tried something new this time: I got the Cedar-Plank Salmon on the Under 550 Calories menu. The salmon was good, but a little on the dry side. I had to ask for tartar sauce to finish it. The side was really good, as it was a mixture of baby spinach leaves and red potatoes.
Monday: Going for a favorite of ours, chicken cordon bleu from Archer Farms. They are frozen, but they are really good, and one of those things that everyone actually agrees on. So when they ask for it, I don’t have any problem making it.
Tuesday: Another family favorite in Easy Chicken Alfredo. I am doubling the recipe so that my husband has leftovers for tomorrow night. I feel bad that he has to have leftovers, since the boys and I are going out to eat Wednesday night.
Wednesday: We have a fundraiser for the Egypt Memorial Park baseball program. It is at a local Buffalo Wild Wings. While I wasn’t impressed with the food or the service, I am happy to give them a chance because it benefits the park program. As a board member at the park, I think it is important to be part of this fundraiser.
Thursday: I am thinking breakfast burritos! I have a committee meeting for the planning of the park’s 2014 Park Festival. Hoping the meeting is quick because The Big Bang Theory and Grey’s Anatomy are both on with new episodes. Priorities, right?
Friday: I am guessing it will be at our local pizza parlor. Oldest has a student council activity till 8pm, so it will just be the three of us. We can always find something there, because everyone can get what they like! No whining necessary.
Saturday: I am going to venture a guess here, but I am thinking Chipotle and Chick-Fil-A. Big surprise. But hey, if it’s good, why change!
So that is my menu plan for this week. I wish I could have tried a few new things this week, but with all the running, it is too much to try a new recipe.
