Happy Summer everyone! The weather is beautiful, and I am sharing some super simple sandwich recipes that will keep your summer a little healthier and a lot tastier.
One of my favorite things about Summer is spending time with my family. Whether we are on our favorite vacation or sitting around the table sharing a meal, as long as we are together, I am content and happy.
The hardest part about sharing a meal is all the time spent in the kitchen preparing it. So, a great alternative for the warm Summer months is adding some super simple sandwich recipes to your menu plan. They only take a few minutes to make, which allows you more time to spend with your family.
Arnold® Healthfull Bread is a great base to your favorite sandwich. With 80 calories per slice, each Arnold® Healthfull® variety is made with 100 percent whole grain flour, is a good source of fiber, and contains no high fructose corn syrup, artificial colors, or preservatives.
And they taste great, too. I will be the first to admit that I love my white bread. I generally avoid the healthier varieties because they don’t taste so good. So when Arnold® Healthfull Bread contacted me about trying their new products, I was definitely curious.
I tried the Steel Cut Oats & Honey and the Nuts & Seeds variety. And to my surprise and delight, they were both delicious! And since Arnold® Healthfull® Bread is certified by the American Heart Association, so I can feel good about serving this to my family. Score for this Mom!

And also, for those of you that may like a warm sandwich, I am sharing this recipe:
- Boneless chicken breast cutlets.
- Heart Smart Roasted Pepper Sauce.
- Low Fat, Low Salt Provolone Cheese.
- Salt and Pepper.
- Lettuce of your choice.
- Arnold® Healthfull® Bread Steel Cut Oats & Honey variety.
- Place a chicken breast cutlet in a non-stick pan and lightly salt and pepper.
- Cook until done through.
- Turn heat to low.
- Spoon on several tablespoons of sauce, and cover. Allow 2 to 3 minutes to warm.
- Add provolone cheese on top, then cover till cheese melts.
- Add to bread(toasted or untoasted), add lettuce on top.
So there you have it, two super simple sandwich recipes that will satisfy any hunger on a Summer day.
