I can’t even tell you how long it has been since I have created an actual menu plan. Life has been so absolutely crazy, between work and baseball and our new kittens. But I am determined that with my retail holiday season, I am going to be prepared.
At least that is the plan.
This week is shaping up to be a lower key week. I only have to run somewhere one night this week. At least so far. My oldest son has a busy after school schedule, so depending on when he is done, I have to pick him up. So here is what my menu plan looks like this week.
Weekly Menu Plan October 17-22:
Monday: Pancakes and bacon. I love how easy breakfast for dinner is.
Tuesday: Lasagna Casserole Bake. Since I work evening shift, this is something I can make ahead of time. My family can just reheat it when it’s time to eat supper. Easy peasy and SO delicious!
Wednesday: Scrambled cheese eggs and potatoes. My husband makes the most yummy cheese eggs. Since we are getting our new sofa, I didn’t want to spend a lot of time in the kitchen. This meal takes minutes to make, yet it keeps you totally full.
Thursday: Spicy chicken sandwiches. I am trying to think of a side dish to go with it.
Friday: Pizza!!! I am so hungry for pizza, and everyone in the house loves it too, so it is a win-win situation. Plus, I don’t have to cook.
Saturday: As always, it is our Chipotle day! Chicken burrito bowl, here I come.
So that is what our menu plan looks like. I may possibly change out Monday’s pancakes for Belgium waffles, it just depends on how tired I am from work. Well, let’s face it, I will probably be too busy playing with these guys:
