I am still in the process of working out how I am doing my weekly menu plan posts. In fact, I am having a bit of a hard time this week getting the family to help out with the menu plan. Hubby goes back to work tomorrow, and I am so sad about that.
One of my goals for menu planning this year is to start cooking healthier meals. I admit, we love our carbs. And pastas. And pastas covered in carb sauces. I really need to start making healthier choices when it comes to meals. Jo-Lynne Shane has a great Real Food Round-Up that talks about eating healthier foods. Make sure you check it out.
So what is cooking this week?
Today: Whatever my MIL makes. We always have Sunday dinner at her house. I am home on the sofa, though with something I strongly suspect is the flu, so nothing for me.
Tomorrow: O.Y.O. I am supposed to work 3-11, but I am not sure that is going to happen.
Tuesday: As requested by hubby, my crockpot white chili. Want the recipe? Just click on the picture below.
Wednesday: I am thinking that it will be a breakfast for dinner kind of night. Belgium waffles and bacon! Click the pic for the recipe.
Thursday: Still up in the air, but oldest put in a request for chicken alfredo, and since I work, I am thinking it will work well.
Friday: To be determined. Depends on what we are in the mood for.
Saturday: Probably our usual, Chipotle and Chick-fil-A.
So there is our menu plan for this week. I hope. Let’s just say, it will probably be open for change.
